Ingredients:
2 pounds seafood or 1 Fryer or 1 Hen
1 pound sausage
12 oz. Roux
3 cups chopped onions
2/3 cup green onion tops
1/3 cups parsley
1 medium bell pepper – chopped
Borel’s Cajun Zing Seasoning
Original to desired salt taste
(If you prefer spicier taste – add Borel’s Cajun Zing No Salt
for a spicier taste)
Directions:
Season seafood, fryer, or hen with Cajun Zing Original Seasoning.
Let
meat set in the refrigerator overnight.
In a large pot add ½ gallon of water.
Bring to a boil.
Add roux
and stir continuously until roux is completely dissolved.
Boil for about 40-60 minutes.
Keep adding water as needed.
Add ½ gallon of water and boil for 15 minutes.
Add seafood, fryer or hen, onions and bell pepper.
Boil
over medium heat with cover off (30 minutes for seafood or fryer, 1 hour for hen).
Add sausage and boil another 15 minutes
for seafood or fryer, 30 minutes for hen.
Taste for seasoning.
Add Borel’s Cajun Zing Original Seasoning if
more salt is needed.
Add Borel’s Cajun Zing No Salt seasoning if more spices are needed.
Add onion tops and
parsley.
Simmer for 10-15 minutes.
Serve
over rice in a large soup bowl.
Serve with potato salad and hot French bread.
